Concierge Sommelier

Serge Chablé has been in the food and wine industry since he was 15 years old. He started out cutting fish for a local Fish & Chips restaurant and soon had his first fine dining job as a busser. He then was trained by Chef Tera Guthrie at The Sportscenter Bar&Grill and became her sous chef for 3 years. Serge went to Humboldt State University to play soccer and study Geography. He finished in 1990 and moved to Charlotte, N.C. and got his first job waiting tables. After a brief stay in Miami, where he worked in his first fine dining restaurant, he moved to San Diego.

Serge decided to keep learning about wine and spirits more out of passion than work related. After working for George Hauer of George’s at The Cove, his wine knowledge had grown to point that he wanted to know more and more. Serge then worked for Roy Yamaguchi for over 8 years. He was the wine buyer at Roy’s Ko Olina and Downtown San Diego. He passed his Level One Sommelier through The Court of Masters program in 2009 and then his Certified Sommelier in Portland in July of 2010. Serge now runs the wine program at The Wine Lover in Hillcrest. He specializes in finding wines that are low production, family owned and of good value. He is very passionate about his work and wine and hopes to run more wine programs as a consultant in the near future.
