Dungeness Crab Salad

You will need 2 bowls and a pot for frying.

Bowl 1
8oz of cleaned and picked Dungeness crab [canned is an option]
1 tablespoon each of lemongrass, ginger and garlic
2 tablespoons of good mayo
Juice of one lemon
Salt and pepper to taste
Mix together in a bowl and refrigerate

Bowl 2
1 avocado with a squeeze of lime
1 tablespoon of fresh cilantro
2 tomatoes tomatoes
Salt and pepper to taste
Mix all of these contents into Bowl 1 and refrigerate

Deep Fry
24 wonton wrappers, or as needed
Vegetable oil
Deep fry until crispy whole won-ton wrappers
Let cool

Assemble your dish !
Layer crab mix, won-tons, avocado and tomatoes. See attachment
